His vision extends beyond energy conservation, carbon reduction, and AI-driven digital transformation; he is bridging the gap between University Social Responsibility (USR) and sustainable tourism, paving the way for Taiwan\u2019s culinary scene to compete on the global stage.<\/p>\n\n\n\n<p>In March 2022, Xiaolu Minglou earned its <a href=\"https:\/\/www.bsigroup.com\/en-US\/products-and-services\/standards\/iso-14068-1-carbon-neutrality-verification\/\">carbon neutral verification from the British Standards Institution (BSI)<\/a> after a rigorous year-long assessment. Carbon neutrality means offsetting an organization\u2019s total carbon emissions within a certain period with equivalent carbon removals\u2014through low-carbon energy, energy conservation, and reforestation\u2014to achieve a &#8220;net-zero&#8221; impact on the atmosphere.<\/p>\n\n\n\n<p>Zeng emphasizes that beyond <a href=\"https:\/\/smeclimatehub.org\/action-space\/\">carbon inventories and footprinting, real action<\/a> is key. (Photo by Xiaolu Minglou)<\/em><\/p>\n\n\n\n<p>Xiaolu Minglou works closely with institutions like NTU, National Taiwan Ocean University, and Pingtung University of Science and Technology. Suppliers must adopt eco-friendly farming practices, while the restaurant continuously develops new dishes to build a truly green supply chain.<\/p>\n\n\n\n<p>For instance, both the rice and tea served come from National Taiwan University. The Shanghai Vegetable Rice (Jade Vegetable Rice) features &#8220;Lu Ming Rice,&#8221; a variety developed by NTU over five years. This champion grain\u2014known as Tainan No. 16\u2014is a hybrid of Tainong 67 and Japanese Koshihikari. Even the tea is premium organic oolong from the NTU Experimental Forest.<\/p>\n\n\n\n<p>The restaurant uses reusable eco-friendly tableware and encourages diners to take home leftovers in sustainable packaging. Through a partnership with NTU researchers, food waste is converted into fertilizer and feed via microbial technology, nourishing the very crops that eventually return to the dining table in a closed-loop system.<\/p>\n\n\n\n<p>Also, the restaurant has pioneered the use of renewable energy, energy management systems (EMS), and low-emission kitchen equipment. (Photo by Chen Jingyi)<\/em><\/p>\n\n\n\n<p>Zeng sees restaurants as vital platforms for the agriculture, fishery, and livestock industries\u2014catalysts for a net-zero circular economy. He aims to work with suppliers to build an ESG-focused, decarbonized supply chain.<\/p>\n\n\n\n<p>&#8220;But with so many initiatives, how do you ensure employees understand them?&#8221; Zeng mentions that one day, he had a sudden idea to have the company accountant photocopy the UN\u2019s 17 Sustainable Development Goals (SDGs). Each employee received a copy in an envelope along with NT$500. Those who could recite the goals received an additional NT$1,000 to encourage their entry into the world of sustainability.<\/p>\n\n\n\n<p>The restaurant is also committed to &#8220;de-plasticizing&#8221; tableware. Once items reach the end of their life cycle, they are recycled into stationery, furniture, or building materials rather than discarded. Simultaneously, a fully automated unmanned dishwashing facility will be introduced to save water and electricity, using UV sterilization boxes so that guests no longer feel the need to wipe their dishes with tissues upon sitting down.<\/p>\n\n\n\n<p>The name &#8220;Lu Ming&#8221; comes from the Xiaoya section of the Book of Songs. This industry-academic collaboration showcases innovative competitiveness that sets it apart.<\/p>\n\n\n\n<p>Looking ahead, Xiaolu Minglou plans to expand into the Hsinchu Biomedical Science Park and hopes to partner with travel agencies on &#8220;Green Tourism&#8221; packages.<\/p>\n\n\n\n<p>Zeng gives an example: a professor from National Taiwan Ocean University secured a local revitalization project to teach fishermen how to cultivate abalone (jiukong). <\/p>\n\n\n\n<p>&#8220;We can design themed tours that combine apparel made from marine waste, zero-emission transportation, abalone gourmet food trucks, and hands-on sustainable farming education into a multisensory journey through sustainable cuisine,&#8221; he explains.
